Choose full sun to partial shade. Work aged compost into the top few inches for rich, well-draining, slightly acidic soil.
Plant seeds directly ½ inch deep, spaced 2 inches apart in rows 12-18 inches apart during spring or early autumn.
Keep the soil consistently moist but not waterlogged. Spinach bolts quickly if the soil dries out in warm weather.
Once seedlings are 2 inches tall, thin them to 4-6 inches apart to prevent crowding and ensure good airflow.
Harvest in 40-45 days. Snip outer leaves for continuous growth, or cut the entire plant off at the base.
